Ingredients: 

  • 8 St. Ewe Rich Yolk Eggs 
  • 1 tsp Smoked Paprika 
  • ½ tsp Tabasco (or more for extra spice) 
  • 1 tsp Dijon Mustard 
  • Salt & pepper 
  • A garnish of your choice 

Method: 

  1. Bring a pan of water to the boil and add your 8 St. Ewe Rich Yolk Opulent eggs.
  2. Boil for 8 minutes, remove and peel the shells.
  3. Cut the eggs in half lengthways and scoop out the yolks, adding them to a mixing bowl and keeping your egg whites to the side.
  4. Add the rest of the ingredients to the yolk and mix well until its nice and smooth.
  5. Add mixture into piping a bag, cut the bottom (for extra flair, add a piping tip of your choice!) and pipe into eggs where the yolk came from.
  6. Garnish with your season of choice – we love crushed pink peppercorns, smoked paprika and chilli flakes.
